Low-Carb-Keto Cinnamon Rolls

I have been eyeballing keto cinnamon roll recipes for a while now. I was under the impression the recipes were all too complicated and it just wouldn’t taste the way I was expecting. I was surprised at how good these cinnamon rolls were. They turned out delightful! The entire family enjoyed them. The only thing I may do differently next time is to add more baking powder to give more fluff.
The one diet you will be successful with is the one you will stick to and I know if my family and I feel deprived of great foods, we would not stick with it! One of my favorite things to do is find recipes we have grown to love and make them keto/low- carb style. So YES! You can have cinnamon rolls with the keto diet! ENJOY!

The icing is the best part

Ingredients

  • 3/4 cup super-fine blanched almond flour
  • 2 oz cream cheese
  • 2 cups mozzarella shredded (using low-moisture is best)
  • 1 egg
  • 1 tablespoon melted butter
  • 2+ tbsp cinnamon
  • 1 tbsp aluminum free baking powder
  • 3 tbsp granulated keto approved sweetener (I used Lakanto-Monk Fruit)
  • Icing

    • 2-4 tbsp unsweetened almond milk (use more for a thinner icing)
    • 4 oz full-fat cream cheese
    • 2 tbsp keto approved sweetener
    • Dash of vanilla

      Instructions

      1. Preheat oven to 350 degrees.

      2. Place mozzarella and cream cheese in a large glass bowl and heat in the microwave for 45 seconds to 1 minute.

      3. Remove the mixture from the microwave, add in the almond flour and egg and stir. If it becomes difficult to stir, place back in the microwave for 20-30 second increments (stirring in between) until able to form a smooth dough.

      4. Place the dough on a sheet of parchment paper, spread out with a spoon.
        5. Place a second sheet of parchment paper on top of the dough, using your hands and a rolling pin/empty wine bottle 😉) into a thin layer about 1/4 inch thick.

*** Handy Keto Mom Hack– use a clean empty wine bottle as a makeshift rolling pin to roll out the dough.

        6. Spread melted butter over the dough using a cooking brush. Sprinkle the cinnamon and keto approved sweetener (Lankanto-Monk Fruit, Swerve Granularover the dough.

        7. Begin rolling the dough using/pulling the parchment paper to form a log with your hands. Slice the dough starting from the middle into about 10 equal pieces.

        8. Using a glass baking dish or cookie sheet, place the cinnamon rolls in the oven on 350 F for 10-12 minutes or until golden brown and firm.

        9. Remove and let cool before icing.

        Icing

        1. Using a hand mixer, mix the unsweetened almond milk, full-fat cream cheese, keto sweetener, and vanilla until icing forms. For a thicker icing, use less almond milk. When finished, use a spoon to drizzle the rolls with icing.
          * For more icing, double the recipe.

Keto Chocolate Chip Cheese Ball

This dessert was surprisingly on point!! I can’t wait to take it to a holiday party and blow people’s minds with a keto friendly treat that they would never guess was keto. The cheese ball is so easy to make. Paired with the keto graham crackers, guests will have no idea it is a keto dish. I was also very surprised the graham crackers were crispy after cooling and taste better than the carby ones on the grocery store shelf. This recipe is  must try! You will not believe how tasty it is. If you make it for the holidays, please let us know!

Ingredients

  • 2 cups superfine blanched almond flour
  • 1/3 cup Lakanto Monk Fruit sweetener or other keto friendly sweetener
  • 1 1/2 tsp cinnamon
  • 1 tsp aluminum-free baking powder
  • pinch of pink Himalayan salt
  • 1 large egg
  • 2.5 tbsp grass-fed butter melted
  • 2 tsp Lakanto maple flavored syrup (optional, but improves color and flavor)
  • 1 1/2 tsp pure vanilla extract
Instructions
  1. Preheat oven to 300F.
  2. In a large bowl, whisk together almond flour, sweetener, cinnamon, aluminum-free baking powder and pink Himalayan salt. Add liquid ingredients next. Stir in egg, melted butter, monk fruit syrup and vanilla extract until smooth dough forms.
  3. Place dough on a large piece of parchment paper and pat out shaping into a rectangle. Top with another piece of parchment. Roll out dough as evenly as possible to about 1/4 inch thickness pressing in the edges to maintain rectangular shape.
  4. Remove top parchment paper and cut into 2×2 inch squares using a pizza cutter. Transfer the entire piece of parchment onto a baking sheet.
  5. Bake 15- 20 minutes, watching closely until just beginning to brown and firm up. Remove crackers and let cool 30 minutes then break up along score marks. They will crisp up as they cool.

If you are looking for a tasty keto cereal let graham crackers cool then crumble them into a bowl and add some unsweetened almond milk. It tastes just like cinnamon toast crunch and it’s actually good for you! MY KIDS LOVED IT! We have found a new favorite.

Keto Holiday Ham and Fixin’s

In this video we make a holiday hickory smoked ham and fixings using our Instant Pot. Sides included Brussel Sprouts with bacon and loaded cauliflower. The cauliflower dish is LOW-CARB due to the Velveeta ingredients, it is best to shred your own cheese to make the dish a true keto side.  However, it was delicious. Velveeta also tends to have a bit more carbs than block cheddar so you want to be sure to limit the amount used, if you choose to go that route.

Enjoy!

Low-Carb Keto Chili

🍂It’s fall ya’ll!🍂
The temperature changed to cold here in CO pretty quickly. As soon as the seasons start to transition our minds go straight to fall goodies, one of those favorites being chili! We experimented with a couple different recipes settling on this one as a favorite so far.
Just a heads up, my husband really likes to spice up his chili so sometimes I will make a separate dish for the kiddos without so much spice to it. This recipe really had just the right amount of kick though. It can be made on the stovetop or in the crockpot give or take some of the ingredients depending on your preference.

Tips: If you are concerned about carb count, lower the amount of tomatoes and increase the amount of radishes- use half a can of tomatoes instead. Use more chicken or bone broth to give additional volume and a thinner base. This chili is the perfect warm and savory recipe for slipping into fall.

Low_Carb_Keto_Chili_Recipe

Ingredients
2 lbs. grass-fed beef
1 can tomato sauce (can also be found here on Vitacost) – tomato paste can also be used here, just look for no added sugars.
1 can diced Roma tomatoes
1- 4 oz can diced green chiles
1/2 white onion- diced
1 bundle organic radishes- washed and quartered
1/2 cup organic chicken broth
1/2 bundle sprigs of cilantro

Seasoning (add desired seasonings of choice- what we used is below)
2 tbsp Chili powder
1 tsp Pink Himalayan salt
1 1/2 tsp pepper
1 tsp red pepper flakes
1 tsp pink Himalayan Salt and Herb blend
2 tsp Mrs. Dash garlic and herb
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp ground turmeric

Additional toppings as desired
shredded cheese
sliced avocado
sour cream

Directions
1. Brown the grass-fed beef and diced onions in a large skillet over medium-high heat. Drain the beef and set aside.
2. On the stove top, use a large pot to add in all ingredients and seasoning. Add the beef last, to prevent sticking.
3. Cook on low-medium, stirring often for about an hour. Let simmer on low for 2-3 hours, the longer it cooks the more flavorful it will taste. If you are impatiently waiting, you can enjoy a bowl about an hour after cooking but for the best tasting chili wait it out.
