Low Carb Keto Snack

Fresh Mozzarella, Garden Tomato, and Avocado

Such an easy, fresh, low-carb keto snack! A great way to wrap up the freshness of summer with some delicious garden ripe tomatoes. Yes, I said tomatoes. When you have eaten lightly for the day there’s room for a couple of these as a snack. Two was plenty! A medium sized tomato has 4.8 g of carbs and 1.5 grams of fiber. If you don’t go crazy with this snack, eating them all, you will be just fine with macros. I love that you can douse these with salt and pepper and add a little avocado and you have a full fat snack on the go.

Directions:
Slice fresh mozzarella, garden tomato, and avocado. Sprinkle with Pink Himalayan salt and pepper. If desired, drizzle with avocado oil, MCT oil, or a Vinaigrette.
Serve and enjoy!

Keto Travel Essentials

Being prepared on the go will help you to stay on track with your keto lifestyle. It is when we are caught unprepared and off guard that we tend to make decisions based on hunger rather than rational food choices when we are satisfied. Cheat meals can turn into cheat days, which will totally wreck your goals of staying in ketosis and feeling well unless you have pure therapeutic ketones in your back pocket.

Hotels
If you are staying in a hotel, try to opt for one with kitchen access (fridge, stove, etc) that way you can prepare meals a bit throughout the stay and you can reheat keto meals you purchased while out at a restaurant.

Flying or Driving
Whether you are flying or driving, pre-pack some keto friendly snacks to have on hand so you don’t make impulse decisions. If you are able to prep some quick grab items that will last a few hours without the fridge, do so.

Nowadays even gas stations are getting wise to the low carb/keto life. When in a pinch, you can find some of these by just stopping at your quick stop gas station.

    This is meant to be a quick snack guide to help you along on your keto journey. Life is meant to be lived and enjoyed, if you see an opportunity during your travels to try something new that you have never had- take it. Even if it means sliding a little off course, you can always jump right back on. Keto is becoming a lifestyle change for many, so restaurants and other places are becoming wise to meeting the need. Lots of places have some wonderful keto options for you, it just might take a little extra effort to find them. We hope this helps take out some of the guess-work.

Low Carb Keto Pita Chip

Looking for a great party snack?
How about that crunch of some delicious chips?

Look no further!

This pita chip hits the spot! Don’t look away, they will disappear before your eyes, they are soo yummy! Pair with your favorite guac and enjoy!

2 cups blanched almond flour (finer texture works well with this chip)
1/2 tsp garlic
1/2 tsp cumin
1/4 tsp onion
1/4 curry
1/4 Paprika
1/4 Pink Himalayan Salt
1 large egg
1/2 cup shredded mozzarella

Directions:
Preheat the oven to 350 degrees F.
Line a baking sheet with parchment paper.
Mix together the almond flour and spices in a bowl.
Add the egg and mix using a hand mixer, until a crumbly dough forms.
Microwave the mozzarella until it’s melted. Add to spice and almond flour mixture and knead with your hands until combined well. If it doesn’t mix well, add back to the microwave for 15 seconds or so and knead again.
Place the dough between two large pieces of parchment paper. Use a rolling pin and roll until it makes a thin layer (more chip like) or a thick layer (more of a pita bread texture/thickness)
Cut the dough into triangles and arrange on baking sheet. Bake for 8 minutes or so until golden and firm. Do not overcook, they will become crisp up as they cool.
